MOUNTAIN BIKER'S BANANA MUFFINS
Recipe Notes: Try replacing the raisins in this muffin recipe with chocolate chips!

Ingredients:
- 1/2 c. sugar
- 1 tsp. baking soda
- 1/4 tsp. salt
- 3/4 c. flour
- 3/4 c. whole wheat flour
- 1/3 c. oil
- 1/4 c. skim milk
- 2 large bananas, mashed
- 1 tsp. vanilla
- 1/3 c. raisins
- Cooking spray
Instructions:
- Preheat oven to 350°F.
- Measure sugar, baking soda, salt, and flour into bowl. Add oil, milk, bananas, and vanilla; mix just until flour is moistened. Fold in raisins.
- Fill standard size muffin cups coated with cooking spray to 2/3 full with batter.
- Bake 15 to 20 minutes or until golden brown. Immediately remove from pan.
