MOUNTAIN BIKER'S BANANA MUFFINS

Recipe Notes: Try replacing the raisins in this muffin recipe with chocolate chips!

Ingredients:

  • 1/2 c. sugar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 c. flour
  • 3/4 c. whole wheat flour
  • 1/3 c. oil
  • 1/4 c. skim milk
  • 2 large bananas, mashed
  • 1 tsp. vanilla
  • 1/3 c. raisins
  • Cooking spray

Instructions:

  • Preheat oven to 350°F.
  • Measure sugar, baking soda, salt, and flour into bowl. Add oil, milk, bananas, and vanilla; mix just until flour is moistened. Fold in raisins.
  • Fill standard size muffin cups coated with cooking spray to 2/3 full with batter.
  • Bake 15 to 20 minutes or until golden brown. Immediately remove from pan.
