FUDGE SAUCE
Recipe Notes: This sauce accompanied a profiterole recipe from The Silver Palate. I liked the profiteroles, but I loved the chocolate sauce on top!
Preparation Time: About 30 minutes
Quantity: Two and a half cups

Ingredients:
- 4 oz. unsweetened chocolate
- 3 Tbsp. sweet butter
- 2/3 c. water
- 1 2/3 c. granulated sugar
- 6 Tbsp. corn syrup
- 1 Tbsp. rum
Instructions:
- Melt chocolate and butter very slowly in a heavy saucepan. Meanwhile, heat the water to boiling. When chocolate and butter have melted, add water and stir well.
- Add the sugar and corn syrup and mix until smooth. Turn the heat up and stir until mixture starts to boil; adjust the heat so that sauce is just maintained at the boiling point. Allow the sauce to boil, without stirring, for 9 minutes.
- Remove sauce from heat and cool for 15 minutes. Stir in the rum. Serve sauce warm over ice cream or profiteroles.
