KEY LIME PIE
Recipe Notes: My mom picked this recipe up while on vacation in the Florida keys. This is the real thing.
Preparation Time: About 1 hour

Ingredients:
- 1 13-oz. can sweetened condensed milk
- 3 egg yolks
- 1/2 c. key lime juice (or lime juice, if key lime not available)
- 1 graham cracker pie crust, homemade or prepared
Instructions:
- Preheat oven to 350°F.
- Beat sweetened condensed milk, egg yolks, and key lime juice until just blended.
- Pour mixture into graham cracker crust. Bake for 30-35 minutes.
- Cool for 30-45 minutes on wire rack. Refrigerate for at least 2 hours. Serve when completely chilled, with whipped cream, if desired. Pie may be stored in the refrigerator for up to five days.
Tips:
- This pie is best with fresh key lime juice. If you can find fresh key limes and squeeze them yourself, it will be worth the effort. Fresh limes are good, too. If you opt for bottled juice, you should be able to find bottled key lime juice in most large grocery stores. Otherwise, bottled lime juice will work well.
