AUNT MARY'S MOLASSES CAKE
Recipe Notes: My grandmother's Aunt Mary made this cake for her when she was young. She recently gave me the recipe and declared, "Learn how to make this!" So, I did, and I am very glad she insisted upon it. This is a unique and spicy cake, and it's great with spiced whipped cream on top.
Preparation Time: About 45 minutes
Quantity: One cake

Ingredients:
- 1/4 c. sugar
- 1/2 c. butter and lard; mixed
- 1 egg, beaten
- 1 c. molasses
- 2 1/2 c. flour, sifted
- 1 tsp. ginger
- 1/2 tsp. cloves
- 1 c. hot water
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
Instructions:
- Preheat oven to 325-350°F.
- Cream sugar and shortening.
- Add beaten egg, molasses, then dry ingredients.
- Add hot water and beat until smooth. Batter will be liquidy and soft but will make a firm cake.
- Pour batter into a lightly greased baking pan and bake for 35 minutes.
