AUNT MARY'S MOLASSES CAKE

Recipe Notes: My grandmother's Aunt Mary made this cake for her when she was young. She recently gave me the recipe and declared, "Learn how to make this!" So, I did, and I am very glad she insisted upon it. This is a unique and spicy cake, and it's great with spiced whipped cream on top.

Preparation Time: About 45 minutes

Ingredients:

  • 1/4 c. sugar
  • 1/2 c. butter and lard; mixed
  • 1 egg, beaten
  • 1 c. molasses
  • 2 1/2 c. flour, sifted
  • 1 tsp. ginger
  • 1/2 tsp. cloves
  • 1 c. hot water
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt

Instructions:

  • Preheat oven to 325-350°F.
  • Cream sugar and shortening.
  • Add beaten egg, molasses, then dry ingredients.
  • Add hot water and beat until smooth. Batter will be liquidy and soft but will make a firm cake.
  • Pour batter into a lightly greased baking pan and bake for 35 minutes.
