ORANGE FROSTED CARROT DROPS

Recipe Notes: Make these cookies, and you'll have anyone happily eating vegetables!

Ingredients:

  • 2 large carrots, peeled and cut into 1 inch slices
  • 1 c. butter, softened
  • 3/4 c. sugar
  • 2 eggs
  • 2 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/2 tsp. vanilla extract
  • 3 Tbs. butter, softened
  • 2 Tbs. orange juice
  • 1 Tbs. lemon juice
  • 2 1/4 c. powdered sugar

Instructions:

  • Preheat oven to 350°F.
  • Cook carrots in small amount of boiling water for 20 minutes or until very tender. Drain, mash well, measure 1 cup, and set aside to cool.
  • Cream butter, sugar, and eggs together until well blended. Stir in the 1 cup of carrots.
  • Mix flour, baking powder, and baking soda. Stir into first mixture. Add vanilla.
  • Drop by rounded teaspoonfuls, about 2 inches apart onto ungreased baking sheets (batter will spread some).
  • Bake for 15 minutes or until light golden brown. Remove to wire racks to cool.
  • Make orange frosting by combining butter, orange juice, and lemon juice. Gradually stir in powdered sugar, mixing until smooth and of spreading consistency. Spread tops of cooled cookies with frosting. Sprinkly with grated orange peel, if desired.
