PHILADELPHIA TRUFFLES
Recipe Notes: These truffles are incredibly easy to make and so good.
Preparation Time: One hour
Quantity: Four dozen

Ingredients:
- 4 c. powdered sugar
- 1 - 8 oz. package of cream cheese, softened
- 5 - 1 oz. squares unsweetened chocolate, melted (buy the best chocolate you can afford)
- 1 tsp. of flavoring -- some options are vanilla extract, almond extract, rum, Cointreau, or Kahlua (my favorite is almond extract)
- 1/2 c. of one (or several) of the following to coat the truffles: powdered sugar, chopped toasted nuts, cocoa, toasted coconut, chocolate or colored sprinkles (my favorite for this is chopped almonds, you can chop them finely in the blender)
Instructions:
- Gradually add 4 c. of powdered sugar to cream cheese, mixing well after each addition. Add melted chocolate and flavoring; mix well.
- Chill for several hours.
- Remove from refrigerator and shape mixture into 1-inch balls; roll each in coating. Place each in a paper muffin or confection cup. Chill in refrigerator in a sealed container so that they do not absorb other flavors.
Tips:
- These will keep in the refrigerator several weeks, if they stick around that long.
