RASPBERRY BARS

Recipe Notes: Here's another of my favorite recipes from Mom. These bars always seem elegant to me. The original recipe recommends cutting them into 1-inch pieces and tucking them into little paper bonbon cups. However you eat them, I hope you enjoy!

Ingredients:

  • 1 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/2 c. butter
  • 2 eggs
  • 1 Tbs. milk
  • 1/2 c. raspberry jam
  • 4 Tbs. butter, melted
  • 2/3 c. sugar
  • 2 c. coconut flakes
  • 1 tsp. vanilla

Instructions:

  • Preheat oven to 350°F.
  • Measure flour and baking powder into bowl. Add butter and either cut in with pastry blender or use a hand mixer to blend butter into flour until mixture is the consistency of cornmeal.
  • Stir in one egg and the milk. Mix until a soft dough is formed.
  • Spread into an ungreased 8 or 9-inch square pan, pressing with fingers to cover bottom with an even layer of dough.
  • Spread raspberry jam over dough evenly.
  • Stir together the remaining egg, butter, sugar, coconut, and vanilla. Spread on top of the jam.
  • Bake for 30 minutes or until top is lightly browned.
  • Cool, then cut into squares.

Tips:

  • You may substitute other flavors of jam for the raspberry, such as strawberry, peach, apricot, or any other favorite.
